Irish Soda Bread

This is a recipe inspired by St Patrick’s Day and is one of the easiest bread recipes you will make; definitely give this one a try! It is really versatile and lovely for breakfast with some honey, or for lunch with a hearty soup. I also like it with smoked salmon, or as shown here, with some cheese and pickle.

Cooking/Prep Time: Prep - 5 minutes; assembly and cooking 45 minutes

Serves: 4

Ingredients: 

  • 170g plain flour
  • 170g self raising wholemeal flour 
  • ½ tsp Bicarbonate of Soda
  • ½ tsp salt 
  • 1 x 300ml tub of buttermilk

Method: 

  1. Pre-heat the oven to 200C/180C fan
  2. Line a baking sheet with baking paper
  3. Mix all of the dry ingredients in a large mixing bowl
  4. Add the buttermilk and mix with a spatula and then your hands to bring it together into a dough. It should be a little sticky but not wet.
  5. Shape into a round loaf and take a sharp knife and create a cross on top
  6. Bake for 40 minutes in oven and to make sure it is cooked through, check you get a hollow sound when you tap the bottom
  7. Cool on a baking rack and serve with salty butter
