Apple, Walnut and Cinnamon Porridge

I don’t think you can beat a bowl of porridge anytime of the year, but there’s something extra warming and comforting about enjoying it throughout autumn and winter.  

Apple and cinnamon is one of my favourite flavour combinations, and when you add toasted walnuts and almond butter, it takes the whole bowl to another level. My porridge is creamy, wholesome, and the perfect balance of comfort and nourishment.  

Ingredients: 

  • 40g oats
  • 1 tsp chia seeds
  • 250ml unsweetened almond milk (or milk of choice)
  • ½ tsp ground cinnamon
  • Pinch of salt
  • 1 small apple
  • 2 tsp maple syrup 
  • ½ tsp ground cinnamon
  • 15g walnuts, roughly chopped 
  • 1 tbsp almond butter 

Method:

  1. Add your oats, chia seeds, cinnamon, salt and milk of choice to a small saucepan. Cook gently over a low-medium heat, stirring occasionally until the porridge thickens to your liking.
  2. Meanwhile, peel, core, and cut the apple into bite-sized chunks. 
  3. Add the apple chunks, cinnamon and maple syrup to a pan over a medium heat. Bring to a simmer and cook for around 5 minutes, stirring frequently until softened and slightly caramelised. 
  4. In a dry pan toast your walnuts until fragrant (around 1-2 minutes), stirring frequently to ensure they don’t burn. 
  5. Spoon your porridge into a bowl and top with the warm caramelised apples, toasted walnuts and almond butter. 

Top Tip: 

The slower you cook your oats, the creamier they will turn out – so be sure not to rush this step.
