Christmas Quesadillas with homemade Cranberry Relish

It wouldn’t be Christmas without leftovers! There is always a bit of Turkey and a few pieces of cheese in everyone’s fridge, so why not layer it up with some crispy bacon and some cranberry relish in a delicious quesadilla.
Perfect to serve on the Cole & Mason Acacia wooden chopping and serving board, and the Hoxton Christmas gift box would make a lovely addition to any Christmas table.

Cooking/Prep Time: Prep- 30 minutes; assembly and cooking 5 mins
Serves: Feeds 4
Ingredients:
- 4 Large tortilla wraps
- Leftover turkey or chicken (shredded)
- Rocket or spinach
- 150g Brie/Camembert (or any leftover soft cheese)
- 6 slices of streaky bacon
Cranberry and Caramelised Onion Relish (recipe makes 4 small jars)
- 6 red onions
- 1 x 500g Cranberries
- 100ml red wine vinegar
- 4 tbsps brown sugar
- 1 tsp mixed spice
- 100ml port
- 1 tbsps salt
- 50g butter
Method:
For the Relish:
- Slice the red onion in thin half-moons and in a thick bottomed or cast iron pan melt the butter with a splash of oil. Add the sliced onions and allow to cook over a low heat for 10 minutes. Add the salt and cover and cook for a further 10 minutes until soft and with a little colour.
- Add the cranberries, sugar, vinegar, spice and port and cover for a further 10 minutes.
- Now remove the lid and simmer until you reach the required consistency
- Take several jam jars and sterilise them (fill with boiling water and dry in the oven at 140C, then allow to cool)
- Spoon the cranberry relish into the jars and seal.
- These will keep up to 2-3 months.
For the Quesadilla:
- In a frying pan, lay the streaky bacon flat and fry on either side until crispy. Set aside.
- In the same pan on a low heat, add the first tortilla. On the uncooked side, add the shredded turkey, 3 slices of the streaky bacon, 1 tbsp of the cranberry relish, 3 slices of the brie and a handful of rocket.
- Place the second tortilla on top and then flip to cook the other side. Once both sides are crispy and the cheese is melted, remove from the pan and cut into 4. (this will serve 2)
- Repeat the process to serve 4 people.
