Sharing Steak Ciabatta & Air Fryer Fries

With a summer of sport in full swing, this is a super tasty sharing sandwich for watching your chosen team! This perfectly pink steak with caramelised onions is served with a mustard mayo and peppery rocket.
No matter if your team is not doing so well, this will give you something to cheer about! Very important to season the steak before and after cooking and the London Mill in Acrylic – Cole & Mason UK (coleandmason.com) is the best option.

Cooking/Prep Time: 15 minutes prep, 40 minutes cooking
Serves: 4
Ingredients:
For the sandwich
- 1 large sharing steak - ribeye or sirloin would be best
- 2 large red onions
- 3 tbsps mayonaise
- 1 tbsp of mustard (English or Dijon)
- 1 small bag of rocket
- Cheese - Taleggio or Emmenthal work really well
- 1 large part cooked ciabatta
For the Fries
- 4 large potatoes
- Sunflower oil
Method:
For the fries
- Cut the potatoes into thin sticks (to your preference of thickness)
- Bring a pan of water to the boil and drop the potatoes in for around 6-7 minutes – dry on kitchen paper until cool
- Take a large bowl and place the potatoes in with 2 tbsps of sunflower oil
- Season well with salt, pepper, paprika
- Set your air fryer to 200C for 20 minutes. Shake the basket after half of the time and cook until crispy.
For the sandwich
- Slice your onions into half moons and add to a frying pan with a knob of butter and tsp oil. Add a pinch of sugar.
- Cook on a low heat for 20 minutes or until brown and very soft – set aside and keep warm
- Season and oil the steak with salt and heat up a good quality frying pan until smoking hot
- Now add the steak and cook until a crust has formed and the meat is browned (around 2-3 minutes)
- Turn the steak and sear the other side. Turn the heat down and cook gently until the meat is pink (around 45-50C internal temperature)
- Set aside in foil and rest in a warm place
- Now mix the mustard and mayonnaise together in a bowl
- Use the steak pan and toast the ciabatta on the either side until crisp (this could also be done on the grill or in the oven)
- Add the sliced cheese and melt on one half of the ciabatta
To serve
- Start to build the sandwich with a layer of mustard mayonnaise
- Add a good handful of the rocket and distribute evenly
- Slice the steak into thin pieces and place on top of the rocket
- Add the caramelised onions on top of the steak
