Swedish Style Smoked Salmon Sandwich

Mothers day comes but once a year, the time that the little cherubs get to say thank you, and what better way to say thank you than Breakfast (Brunch) in bed. 

Here’s a great yet simple sandwich that the kids can really get involved with as its all about tasty decoration in the form of fresh dill, crunchy pickles and sweet red onion bejewelling a lovely smoked Salmon and cream cheese bagel. 

Kitchen tools needed:

Prep: 10

Cook: 3

Difficulty: Easy

Serves: 1 Lovely Mum (recipe can by multiplied for each addition cherub)

Ingredients: 

  • 1/2 a Bagel (preferably the top)
  • 2-3 tbs of cream cheese
  • 2-3 slices of smoked salmon
  • 1/4 red onion ( finely sliced)
  • 1 medium pickle (chopped)
  • 1 large sprig of dill (chopped or just simply pulled apart) 
  • A squeeze of lemon juice 
  • Freshly milled black Pepper to taste

Method:

  1. Lets not over complicate this, slice the bagel in two, then on the top half, spread the cream cheese nice and thick, layer the smoked salmon but try to get a bit of height in places to make it look interesting. 
  2. Sprinkle (or place with Michelin star precision) the dill fronds. Red onion slices and chopped pickles. 
  3. Add a little squeeze of fresh lemon juice and a few terns of the pepper mill.
  4. Take it upstairs and let mum enjoy in bed while reading the lovey Mothers day card!

TIP:

I personally don’t think it needs any salt as the smoked Salmon already adds that part.
