For the salad:
- 4 Oranges, sliced
- 4 medium sized cooked beetroot, sliced
- 1 avocado, sliced
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 2-3 tbsp orange juice
- Salt & Pepper to taste
- 50g crumbled feta
- 2 tbsp mixed toasted seeds
- 2 tbsp fresh mint
- Slice the oranges, beetroot, and avocado.
- In a small jar, combine olive oil, red wine vinegar, orange juice, salt, and pepper to make the dressing. Shake to combine.
- Arrange the sliced oranges, beetroot, and avocado in a serving bowl.
- Drizzle the dressing over the salad.
