Healthy Air Fryer English Breakfast Wrap

Typically, an English breakfast is served with toast. However, my take on a healthier English breakfast is served in a wholemeal wrap and cooked in the air fryer until hot and crispy - delicious!

I love how quick and easy this breakfast is to make. As there’s only so much you can fit inside a wrap, you can choose to include your favourite ingredients from a typical English breakfast. I have included spinach for extra nutrients.

Ingredients 

  • 1 Wholemeal wrap
  • 1 Low fat sausage
  • 2 Eggs
  • 50g Mushrooms of choice
  • Handful of spinach

Method  

  1. Start by cooking your sausage as per the instructions provided, once cooked through and cool enough to handle, cut in half.
  2. Whisk your eggs and season with salt and pepper. Heat a small frying pan over a medium heat and coat with cooking spray. Pour the whisked eggs into your pan and cook gently for 2-3 minutes, mixing continuously until the eggs are no longer runny – remove from the heat.
  3. Roughly chop your mushrooms, add to a microwave-safe bowl, cover and cook in the microwave for 2 minutes, stirring halfway.
  4. Add the spinach to the middle of your wrap, top with your scrambled egg, mushrooms and sausage.
  5. Roll your wrap and fold both ends – you can use a cocktail stick to ensure your wrap holds securely, just remember to remove them before eating.
  6. Spray your wrap with a little oil and air fry for 5 minutes until crisp and golden.

Top Tips

  • If you are vegetarian swap the meat sausage for vegetarian or omit altogether.
  • If you enjoy some heat to your food, add some chilli flakes or tobasco before transferring to the air fryer.
