Vegan Date Night Bucatini

This simple yet sophisticated pasta dish comes together in the time is takes to cook the bucatini, allowing you to spend more time with your date.

Ingredients:

  • 250g bucatini
  • 50g parsley
  • 50g basil
  • 2 tbsp capers
  • 1 red chilli
  • 1/2 clove garlic
  • The juice and zest of 1 lemon
  • 50ml olive oil + extra to finish. 

Method: 

  1. Begin by bringing a pan of salted water to the boil and dropping in the pasta.
  2. While the pasta is cooking, add the rest of the ingredients to a food processor and blitz until you have a rough pesto. Season with salt and pepper and set aside. 
  3. Reserve some of the pasta water and then drain the pasta. Return the pasta to the pan and add the pesto. 
  4. Gently heat and add pasta water and more olive oil and stir to emulsify. 
  5. Check the seasoning and then serve.
