Chai Overnight Oats

No matter what time of year it is, oats will always be a favourite breakfast of mine. They are so versatile, can be eaten hot or cold, are nutritious and so easy to put together – what’s not to love? 

Overnight oats are my go-to make ahead breakfast for days in the office, and busy mornings when I know I will have limited time to spend on making a breakfast. Chai spiced overnight oats are one of my favourite flavour combinations, they are creamy, slightly sweet with a balance of richness and spice.

Serves: 1

Ingredients:

  • 45g oats
  • 2tsp chia seeds
  • 1tsp ground cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp allspice
  • Small pinch of salt and pepper
  • 100ml unsweetened almond milk (or milk of choice)
  • 1tsp honey
  • 75g Greek yoghurt
  • Handful of walnuts (optional) 

Apple topping:

  • 1 small apple, cored and chopped into bitesize pieces
  • 1tsp ground cinnamon
  • 2bsp water
  • 1tsp honey

Top Tip

  • Overnight oats can be made in bulk, triple the portion and you have 3 days’ worth of breakfasts on the go.    
  • The Greek yoghurt can be substituted for your yoghurt of choice, remember to adjust the measurement of milk depending on how thick you prefer your oats.
